What you own, exactly.
Ownership should be checkable. This page says what you control, what you can download today, what Steadline runs for you, and what is not portable yet.

Design and copy
Your website's design and the copy written for you become yours once the setup fee is paid in full, as the website terms say. Your domain always stays registered in your name.
Future native apps
If Steadline builds native apps, the plan is that you own the Apple and Google developer accounts and pay their fees directly; Steadline would be added as a team member you can remove. Native apps do not exist yet.
Terms
Ownership terms for applications are a draft pending owner and legal review. Today's binding terms are the website terms shown at checkout.
Downloads come with your Steadline account. Customer accounts are not open yet; you can build, preview and reserve a website without one.
